下水头村是潮安区江东镇下辖的行政村，在上水头村之南，东、西两面紧靠韩江堤围，与潮州城区和枫溪区隔江对望。村名因位于上水头之下而来。[1]
历史沿革[edit]
村中蔡姓先辈原自浙江迁居福建莆田，再迁澄海渔洲；据博雅地名网，明隆庆年间（隆庆元年即公元1567年）蔡兰轩自渔洲来此创村。村中另有李姓一支，先辈在此定居至今；新中国成立后，林姓由潮州城区迁来落户。[1]
1977年，村以主村之名设立下水头大队；1999年改为村民委员会，此名沿用至今。[1]
地理环境[edit]
村子北部与上水头村相接，南面与钟厝、柚杭、柚园等村毗邻。地势较高，土地平坦，属沙壤土，经多年改良和兴修渠沟，排涝灌溉条件得到改善。[1]
人口民族[edit]
博雅地名网所载全村共有324户，计1457人（男690、女767），另有李姓59人、林姓9人。该网站未注明统计年份。[1]
经济[edit]
村里以农业和家庭副业为主，耕地约260亩，村民多种蔬菜，以芥菜和白茄较为出名。村内没有村办企业，个体民营企业则从事服装、洗熨、机绞、机绣和手工艺品的来料加工。另有三百余名青壮年长期在省内城市打工，或做小本生意。[2]
文化[edit]
清乾隆年间，村中乡贤蔡新孝曾任太子太傅，村里因此建有“蔡氏家庙”。乾隆二十二年，蔡美庵中进士；光绪年间，蔡启赐、蔡成统等人官至七品。[2]
清末民初，村中开办夜校，并于此兴建“和衷学校”；抗战胜利后，学校经备案定名为「潮安江东乡第五中心小学」，附近上水头、钟厝、柚杭、柚园等村的学童都曾在此读书。解放后，学校先改名为“水头学校”，后称“下水头学校”。据博雅地名网，知名侨亲李汉强出资70万元建设江东华侨中学，蔡其逢则出资30万元修建下水头学校。[2]
